(adapted from a Whole Foods handout)(This recipe came home from CPSfC with Benjamin several years ago; we have lost track of which teacher/assistant he made these with)

  • 3 cup rolled oats
  • 1/3 cup almond butter (or other nut butter)
  • 1 cup dried fruit (original creator used apple-sweetened cranberries)
  • 1/2 cup orange juice
  • 1/3 cup agave nectar (or other liquid sweetener)
  • 1 tsp cinnamon (original creator added a pinch of nutmeg also)
  • 1/2 tsp salt
  • 3 egg whites (original creator mused whether one could use whole egg)
  • 2 tbsp ground flax seed (original creator suggested skipping this part because the recipe called for sprinkling it on afterwards & felt it was not worth the trouble)

Preheat oven to 350F. Spray an 8x8" pan. Mix everything together and press firmly into pan. Bake until golden brown around the edges, about 35 minutes.
