(makes 12){doubled recipe in braces}

Preheat oven to 400°F

  • 2 {4} Ripe bananas, mashed
  • 1/4 {1/2} Cup Olive Oil
  • 1/4 {1/2} Cup Water
  • 1/4 {1/2} Cup Honey (or sugar --> use a little more liquid)
  • 1 {2} Egg{s}
  • 1 3/4 {3.5} Cups Flour
  • Pinch of Salt
  • 1/2 {1} tsp baking soda
  • 1 {2) tsp baking powder

Optional: 1/8 Cup ground flax seed

Put paper muffin cups in tin.

Mash bananas in bowl. Add first oil, then honey (this way the honey slides right out of the cup), and water. Beat eggs into a small bowl first and then add & mix altogether.

Measure flour into larger bowl. Add salt, baking soda, and baking powder {and optional flaxseed} and loosely stir around. Make a hole in the middle and add liquids. Mix gently until all dry ingredients are wet. Spoon into muffin cups. Bake for 18-20 minutes (or until toothpick comes out clean).


This recipe is also for Banana Bread; just pour into bread pans instead of muffin cups/tins.
